Natural habitat: Bunapi-shimeji is a saprophyte on oak, elms, beech, willow and other hardwoods. Found in deciduous forests of Europe, North America and East Asia (in particular in China and Japan).
Appropriate substrate: Supplimented sawdust of oak, alder, beech or elm.
Usage: Shimeji is rich in umami tasting compounds such as guanylic acid, glutamic acid, and aspartic acid
